Jus Rol Gluten Free Puff Pastry Chicken Pie

Feeding men is hard work! Salmon and salad doesn't always seem to cut it! Pie, mash and gravy is one of James' favourite meals so I thought I would try cooking something a little different to see if he would enjoy it. I decided to make a chicken pie, without gravy and instead I opted for a creamy sauce with mushrooms and onions.


  • Jus Rol Gluten Free Puff Pastry 
  • 1 Red Onion 
  • 1 Tin of Mushrooms 
  • 2-3 Cooked Chicken Breasts (these can be left overs or cooked the day before)
  • Flour 
  • 1 Cup of Chicken Stock 
  • 1/2 Cup Milk 
  • Butter
Chop the onion and place in a pan with the tin of mushrooms (drained) and butter to sauté. Once softened, add the chicken and then put in enough flour to just lightly coat everything. 

Add the cup of chicken stock and milk and cook until the sauce thickens slightly. I tend to put it on a mid heat for 5 minutes. 


Decant into a pie dish and place the puff pastry on top. Being pre-rolled this takes two minutes. Cut a hole in the top of the pie for air to escape and glaze with milk.

Put in the oven for 20-25 minutes or until golden brown. 

Serve with veg and mash (or just veg in my case!) 


This pie serves 4 people and is a great winter warmer in this cold weather! It is quite a quick meal too, which is always good in my eyes because unless you have the whole day, sometimes you want to just create something quick, healthy and filling!
