Gluten Free Beef Stew Recipe

I'm back today with another winter warmer. Being January I find that I like to cut back a bit on the rich indulgent foods and hopefully loose the few pounds inevitably put on over the festive season. So what's better than a beef stew packed with veg!

This recipe takes about 10 minutes prep and 30 minutes cooking so is a great quick warming meal.



To serve two you will need:

350g Diced beef (this is one small pack)
One onion
Two cloves of garlic
Two carrots
One baking potato
1 cup of frozen peas
Knorr beef stock
Pinch of rosemary and thyme (this is around 1/4 teaspoon I imagine)
Bayleaf
85-100g Tomato puree depending on how tomato flavoured you'd like
Rice, I use 1/4 cup of dried rice per person, but again this amount is personal preference

For this recipe I tend to dice all the veggies before I even start cooking. I find that this just works best for me!

So heres the recipe:

Brown off the beef in a pan and then remove and place to the side in a bowl.

Put the onion and the garlic in the pan the beef was in and soften. Before it browns, put in the stock made according to the instructions but with the tomato puree added. Then add the rosemary, thyme and the bayleaf.

Add the beef, potato, and veggies to the pan and simmer for 30 minutes with the lid on.

Whilst this is simmering, make however much rice you desire.

After 30 minutes the stew should be ready, so place the rice in a bowl and add the stew on top, remember to remove the bayleaf!

This quick, simple and cheap recipe is filling, nutritious and relatively quick to make. I Imagine it would slow cook just as well, just remember to make the stock more concentrated as the water will not evaporate! If slow cooked whilst at work you'll be able to get dinner on the table 5 minutes after getting home if you use microwave rice too!
