Phil Vickery - Stir-Fried Rice With Avocado and Horseradish

In barbecue season it is always hard to find new and different sides to have with your burgers! Phil Vickery always comes to the rescue, in the form of the seriously good gluten free cook book. Pasta salad is a firm favourite, but with having increasing amounts of grilled meat, things can get a bit repetitive!




This recipe is super simple, you will need. 

  • 2x 115g packs of microwaveable basmati rice
  • 2 large tomatoes, chopped
  • 1 ripe avocado, cubed
  • 4 tablespoons chopped coriander
  • 2 spring onions
  • 1-2 tablespoons vegetable oil (I didn't use this in the end)
  • 2 large eggs, beaten
  • 1 tablespoon horseradish 
  • Salt and pepper
I halved the recipe as I used it as a side dish for three people. All you do is chop the veg and coriander and pop in a bowl. Microwave the rice for the guided time then put it in the pan with the egg and mix. Mix through until the egg is cooked. Then add this to the bowl with the veg and mix in the horseradish. Done! 

Simple is what I like, even more so when everyone loves it! Cooking in mere minutes, this rice is very fresh and light, brilliant with steak, as the horseradish is it's perfect pairing! Being naturally gluten free it's makes this dish perfect for big family BBQ's where you all bring as dish as you can double or even quadruple it very easily.

I would love to know what your favourite side dishes are or if there is a Phil Vickery recipe I need to try! I could not find the recipe on his site, but Phil has a similar one online here.
