When Newburn Bakehouse sent me some happy mail of an orange and sultana cob, I knew that I had to make a bread and butter pudding with it! I figured that its orange twist would make this typically winter warmer a bit more summery!

You will need:

  • 1/2 Newburn Bakehouse Orange and Sultana Cob
  • 50ml Double Cream
  • 350ml Milk
  • 2 Eggs
  • 25g Sugar
  • Butter
  • Cinnamon (if desired)

Simply slice half of the cob into slices, trim off the crusts and butter the slices.

Grease a dish and put a layer of the bread at the bottom, butter side up, sprinkle with cinnamon and add a second layer of bread. Then put to the side.

Crack the eggs into a bowl that ideally has a lip for easy pouring and whisk in with the sugar.

Warm up the milk and cream in a pan, make sure it is just warm not boiling.

Combine the eggs and sugar mixture with the milk and cream and whisk together.

Pour the mixture through a sieve into the dish making sure the bread is well covered.

Let sit for half an hour to an hour for the mixture to absorb into the bread.

Sprinkle the top with cinnamon and sugar and put into an oven at 180 for 40 minutes.

Once golden remove from the oven and serve with rich custard!

I would love to know if you give this a go and what you thought! I think where the sultanas are already in bread it makes them more plump and juicy! I also enjoyed the subtle orange hint, it really lifted the flavour!

I have another Crumpet recipe today. I walked past a lemon meringue pie in M&S the other day and thought maybe I could use up a couple of nests I had left and make one. But when I got home I was missing a couple of ingredients for the pastry, which led me to raid the the freezer to see if I had another way of making one, and then the crumpets came to mind! So I experimented and this is what I came up with!

This two minute recipe takes seconds and it really hit the lemon meringue spot!

  • Hawskhead Lemon Curd
  • Warburtons Newburn Bakehouse Crumpet
  • Meringue nest
Toast the crumpet in a toaster.
Add a tablespoon of Hawskhead lemon curd and spread on top on the crumpet.
Crush the meringue nest and sprinkle on top.

See it's really that simple! It is a great sweet treat! Let me know if you try it and what you think!

I'm back with another crumpet recipe today. When I first saw the sundried tomato paste in the hamper  I thought it would go well with some tuna. That led me to think about the tuna melts that I used to love to eat in coffee shops, and so I thought why not try and translate this onto a crumpet, with a sundried tomato twist!

With only four ingredients and minimal cooking and preparing time, its perfect with some mixed leaves for lunch!

You will need:

  • One Warburtons Gluten Free Crumpet
  • 1/2 Tin of Tuna
  • 2 Tablespoon of Sundried Tomato Puree
  • 25g Grated Cheddar
Toast the Crumpet lightly.

Mix the tuna and puree in a bowl.

Put the crumpet onto a baking tray and place the tuna mixture and grated cheese on top.

Put in an oven at 180 for 10-15 minutes to allow the cheese to melt thoroughly.

Serve.

Let me know if you try this recipe and what you think!

If you asked me what reminds me most of summers in my childhood, I would have to say visiting a National Trust House or Gardens and my grandparents ordering a cream tea in the cafe. They were often so huge that we shared one between the three of us! Raspberry jam, although not conventional, is my favourite jam to have with a cream tea, mainly because I can't always eat strawberry's, but also because I like the crunch of the pips!

Seeing the Raspberry and Vanilla Jam in my hamper brought back those memories as I tend to associate vanilla with a creamy taste, so I thought it would go perfect with a bit of clotted cream and I just had to try it on the crumpets!

So, I very simply toasted the crumpets for a couple of minutes and served them with the Hawkshead Relish Company's Raspberry and Vanilla Jam and some Clotted cream. Perfect for a late lunch or evening tea after a Sunday Roast!

I personally thought that the crumpets worked as a fantastic replacement for a scone! Gluten free scones can be very dry and crumbly, whereas the crumpets are not, which means half your jam and cream doesn't end up covering you as parts of the scone fall apart!

I made this for myself and James and when I presented it to James he wasn't too sure of the idea of a cream tea without a scone. Nevertheless, he gave it a go and thoroughly enjoyed it! Even the gluten free crumpet and he is a gluten lover, much to my despair! So, to get a super positive reaction from him is really great!

I would love to know if you try this and what you think!

On Monday I received a very exciting package from Newburn bakehouse inviting me to partake in their #Crumpetchallenge this February! When they reached out saying they were sending a hamper to me to get creative with their crumpets, I just couldn't wait to see what would be inside and what I could create out of it!

When I opened the package it was all in a lovely wicker basket and I found lots of lovely goodies! Here's what was in my hamper!

Of course the foremost item in this box was a pack of the gluten free crumpets! There was also a voucher to get another pack so they don't expire, an avocado and a banana!

The next thing that caught my attention was a raspberry and vanilla jam from the Hawkshead Relish Company, which in all honestly sounds like something I would eat straight from the jar! I love raspberry jams and vanilla flavoured anything so I think this would be perfect for me! There was also a lemon curd inside the hamper which is also one of my favourite preserves. James loves lemon curd too so I am sure he will have a few ideas for this!

There is also a sun-dried tomato paste by Epicure. Crumpet pizzas come to mind straight away with this but I am also going to try and find something a bit different to do with it too!

The last and if not the best item was the hand stamped butter knife. I actually have a small collection of hand stamped spoons and items as a lady who lives near my parents does it! She even made me 'I Can't Say I Do Without You' keyring's with our wedding date for my bridal party crackers. This extra gift is completely me and I love it so much!

Thank you Warburtons Newburn Bakehouse for such a lovely hamper and I can't wait to share the ideas I create over the next few weeks!
