Since being gifted a new food mixer I have desperately wanted to try baking a loaf of bread using it! So I dug out the Delicious Alchemy brown bread mix from my packet mix box and thought I would give it go. Being a fan of their white bread I baked previously, I thought that this would be the best one to try it with as previously I was mixing them by hand and I wanted to see the difference!
For this mix you only need vegetable oil and water, so things that are in everyones cupboards really! For this recipe all you do is pop the mix, oil and water in the mixer and put it on a medium speed for 2.5 minutes. Then use a spatula to remove from edges and then mix again for 2.5 minutes on a medium speed.
Once that has been done, pop in a loaf tin and prove for 20 minutes. Bake for 80 minutes and you're done!
This pack retails at £2.49 and created a reasonable size crispy loaf. I tend to find that freshly baked bread always tastes better than a pre bought loaf, so although after adding the other ingredients and cooking this mix is on the pricier side for gluten free bread, I find that fresh baked taste cannot be beaten!
Although the loaf doesn't create huge slices, texturally it's fantastic, it holds together well and doesn't fall apart as you cut it. I find that sometimes a loaf you have to cut can be a bit more crumbly so I'm glad this one wasn't as I hate ending up with a pile of crumbs! Two slices were only around 110 calories too!
My favourite meal I created with this bread was avocado on toast with smoked salmon, although it was very basic this bread is perfect for this! All I do is toast the bread, smash avocado, black pepper, salt and chilli fakes on the top, add salmon and add a bit more pepper on top! Simple quick healthy brunch!

Reduced Gluten Free Tesco Haul
I think the January health kick has hit the Tesco near me, as all the naughty gluten free treats seem to be reduced! I'm not one to jump on the band wagon ... in other words I don't mind being a fatty! I picked up everything that everyone else is clearly trying to avoid at the minute!
So, what did I get?

I'm not too sure why these were reduced as they are best before May! I love these though so when I saw that they were double reduced to half price at £1.10 a packet, I picked up the last one! I'm just hoping that Tesco carry on stocking these and it wasn't a sign of them being discontinued!
Hale & Hearty Honey Bee Cereal Bar & Hale & Hearty Coco Jungle Cereal Bar
These too were double reduced to make them half price! I have never had these before but I always thought they look intriguing! The bars are only 83/93 calories and have quinoa in them. They are also egg free and non GMO. The only downside I see is that they are really high in sugar, but as a sweet treat I don't mind too much!
Have you spotted some free from deals in your supermarket isles? I'd love to know!

Gluten Free Sunshine Supper - Using up leftover roast Chicken
Ever had that one meal as a kid where you just can't wait until your mum served it that evening? Well sunshine supper is mine. Thank goodness I can still eat it!
This is the quickest, easiest recipe and is super cheap to make too. I had to buy chargrilled chicken this time but it's best on a Monday night with the left over roasted chicken from the Sunday roast. The great thing about this recipe is a typical pack of rice serves two people and depending on how much meat you like in a dish, you can make this as meaty or as not meaty as you want as the ingredients do not need to be measured!
For two people you will need:
Roasted chicken
Frankferters
Bacon Lardons
One pack Golden rice - This can be any gluten free brand you want, my Mum used to use Bachelors, but this does have a may contain warning, so it is down to your own digression what you use! Uncle Ben's microwave pack and Birdseye steam bags are both gluten free and have no warning on the pack if you are unsure where to start looking!
Cook the bacon lardons in a frying pan whilst also cooking the frankfurters in a pan of water as well as the golden rice as per instructions.
Cut the frankfurters into chunks and place in a large bowl with the cooked chicken, bacon and the cooked rice. Mix and serve.
To serve to more people, just increase the amount of rice and add extra bacon, chicken and frankfurters. This recipe is very popular with kids as it similar to a paella just without such strong flavours and a slightly drier texture.
To add a twist you can always add some sliced mushroom in with the bacon when cooking to add something more if you'd like to use less meat. I really enjoy this but my fiancé isn't a fan of mushroom so I didn't add it this time!

Gluten Free Beef Stew Recipe
I'm back today with another winter warmer. Being January I find that I like to cut back a bit on the rich indulgent foods and hopefully loose the few pounds inevitably put on over the festive season. So what's better than a beef stew packed with veg!
This recipe takes about 10 minutes prep and 30 minutes cooking so is a great quick warming meal.
To serve two you will need:
350g Diced beef (this is one small pack)
One onion
Two cloves of garlic
Two carrots
One baking potato
1 cup of frozen peas
Knorr beef stock
Pinch of rosemary and thyme (this is around 1/4 teaspoon I imagine)
Bayleaf
85-100g Tomato puree depending on how tomato flavoured you'd like
Rice, I use 1/4 cup of dried rice per person, but again this amount is personal preference
For this recipe I tend to dice all the veggies before I even start cooking. I find that this just works best for me!
So heres the recipe:
Brown off the beef in a pan and then remove and place to the side in a bowl.
Put the onion and the garlic in the pan the beef was in and soften. Before it browns, put in the stock made according to the instructions but with the tomato puree added. Then add the rosemary, thyme and the bayleaf.
Add the beef, potato, and veggies to the pan and simmer for 30 minutes with the lid on.
Whilst this is simmering, make however much rice you desire.
After 30 minutes the stew should be ready, so place the rice in a bowl and add the stew on top, remember to remove the bayleaf!
This quick, simple and cheap recipe is filling, nutritious and relatively quick to make. I Imagine it would slow cook just as well, just remember to make the stock more concentrated as the water will not evaporate! If slow cooked whilst at work you'll be able to get dinner on the table 5 minutes after getting home if you use microwave rice too!
